Marmalade, we remove the zest and simmer it first then add in the fruit. The white pith is carted off to the compost heap.It is cooked over a flame until the thinly sliced peel is almost candied and the oranges, lemon and grapefruit cook down to a golden glow with highlights of jewel colored fruit suspended throughout. Simply delicious. 9.8oz.
